How to quantify the mass of 2nd phase after 1s run.

Hi,

After 1s, 2nd phase has been moved from its initial level. How can I quantify the mass of liquid (red phase) that has splashed from its initial level?

In Fluent use a Volume report and there's a mass integral or similar. Compare that with what you started with. However, looking at the two results you may need to review the approach or timestep as I suspect you've lost some mass.
