I am running DEM Simulation and this option has very significant effect on results. But I don't know its value. How to calculate this value or should this be equal to fluid (gas) velocity?

You can rely on free fall experiment (over a reference height in your model) to get a suitable value for it.

I am doing fluidization of solid particles using gas (air). Solid velocity is against gravity in positive (height) direction. How free fall experiment will help me get a suitable value.

Height of bed is 400 mm.

umax= g*time hmax= 400= 0.5*g*time^2> you can then deduce the unmax..
